This is a Professional Pizzeria and Bakers Tool that sells for $24.95 new. It is a very heavy duty roller - docker that rolls out dough while removing any air bubbles and makes a more crisp crust. Also called a bubble buster . Nice weight and feel in the hand with a smooth notched design for a comfortable grip, unlike the cheaper ones sold online. It was not used in daily operations, still almost like new. I bought it from Sysco when I planned on making pizza but didn t go ahead with that, so it was only used a few times.
It was designed for Heavy Continuous Use with 8 Individual Wheels with plastic points, each wheel spins independently. Other Features include a Stainless Steel axle and Stainless Steel handle. This differs from cheap dockers in the weight, balance and design with smooth grooves made in the handle to fit the hand comfortably. Any professional who uses a docker more than a few times a day will know the difference, just like with a good quality knife or any tool, this well designed and built tool is a pleasure to use and will not make your hand sore where you grip it like the cheap dockers do. The roller is 5 inches by 1 inches diameter barrel and 8 inches long, made from 18-0 Stainless Steel And Polypropylene Discs.
